Scalloped Sweet Potatoes with Thyme

Got this recipe out of Real Simple magazine and thought I'd try it last night. Of course Griffyn didn't enjoy it, but Jerry and I did!

2 med. sweet potatoes, peeled and sliced thin
2 med. russet potatoes, peeled and sliced thin
2 cloves garlic, crushed
2 t. fresh thyme leaves
kosher salt and black pepper to taste
2 1/2 c. heavy cream

400 degrees
Put everything except heavy cream into a shallow 1 1/2 quart baking dish. Tosh the ingredients to get it all mixed up.
Add cream and press gently to submerge the potatoes.
Cover with foil for 1st 20 minutes.
Remove the foil and back uncovered for the last 30 minutes or so.
It will get bubbly and golden brown on top. I added some freshly grated Parmesan cheese also. YUMMO!

The red room, has transformed to a warm blue and brown. It is definitely a change, but we have adjusted well!

It's amazing what a new shower curtain and paint can do for a bathroom! I love it! My bedroom is next...

Black Friday!

My aunt, Billie Jo, my mom and I always venture up to the Mall of America on black Friday. My dad drives us and then we call him when we have too many packages and he comes and delivers them to our car. :) So nice!
The Barbie store opened on black Friday this year. There were live Ken dolls at the entrance. We took a pic with them. We had a blast!

Norskie Youth Football has begun!

This is Griffyn's first year of football with pads. He is enjoying it!


We find out what team he will play for today. We think the Gold team, because that is the team Jerry has been helping with.
